Early Passion

Chef’s culinary journey began with humble roots and an unwavering drive to refine his palate. He took a pay cut to train at Fourchettes in Singapore’s Oriental Hotel, then invested his life savings in a self-initiated “tour de France,” working in Michelin-starred kitchens to master classical French technique.

Global Training & foundation

Chef honed his classical foundations in Europe, training at Le Gavroche in London under Michel and Albert Roux, the pioneers behind the UK’s first three-Michelin-starred restaurant.

His journey continued across France, where he immersed himself in regional traditions, seasonal cooking, and Southern French cuisine. These elite apprenticeships were shaped by the mentorship of French chef Bertrand Langlet.

Chef Justin Quek is a pioneering force in Singapore’s modern culinary history. As co-founder of Les Amis in 1994 and a trailblazer of contemporary Franco-Asian cuisine, he helped place Singapore on the global culinary map.

Today, his legacy continues through JQ Global, bringing refined Asian flavours to kitchens worldwide.
