HUMBLE BEGINNINGS
Chef’s culinary journey began with humble roots and an unwavering drive to refine his palate. He took a pay cut to train at Fourchettes in Singapore’s Oriental Hotel, then invested his life savings in a self-initiated “tour de France,” working in Michelin-starred kitchens to master classical French technique.
He later trained at Le Gavroche in London under Michel and Albert Roux, pioneers behind the UK’s first three-Michelin-starred restaurant. His journey continued across France, where he immersed himself in regional traditions and seasonal cooking, guided by the mentorship of chef Bertrand Langlet.
