Justin Quek is one of Asia's most celebrated chefs. His modern approach to French cuisine—melding technical mastery with delicacy—helped put Singapore on the global gastronomic map and inspired a new generation of chefs across the region. Chef Justin began his career at Mandarin Oriental Singapore and The Oriental Bangkok before spending a year in Michelin-starred kitchens across Europe, where he developed a distinctive style combining French precision with contemporary finesse and touches of his Chinese heritage.
In 1994, he co-founded Les Amis, Singapore's pioneering independent French fine-dining restaurant, which grew into one of Asia's most influential dining institutions. He later opened acclaimed restaurants across Taiwan, Shanghai, Hong Kong, Beijing, and Singapore, including Sky on 57, JustIN, and Chinoiserie at Marina Bay Sands.
Chef Justin has cooked for heads of state and global icons, including Nicolas Sarkozy, Bill Gates, and Lee Kuan Yew, for whom he prepared every birthday dinner since 1993. He remains a sought-after culinary consultant to leading F&B groups across Asia.
