Prawn Noodle Soup
A rich and comforting prawn broth packed with deep umami flavour.

Ingredients
- 80g Chef Justin’s Prawn Noodle Soup Paste
- 1L Water or pork stock
- 8 Medium prawns, halved
- 200g Cooked pork ribs (optional)
- 240g Yellow noodles or rice vermicelli
- 60g Bean sprouts
- 40g Morning glory (kang kong)
- 20g Deep-fried shallots
Instructions
- In a pot, bring Chef Justin’s Prawn Noodle Soup Paste, water (or stock), pork ribs and shallots to a boil. Lower heat and simmer for 10 minutes.
- Add prawns and cook in the soup for 6 to 8 minutes until just done.
- In another pot of boiling water, blanch bean sprouts and morning glory, then place into serving bowls. Blanch noodles for 2 minutes and add to bowls.
- Top noodles with prawns and pork ribs, ladle over the soup base, and garnish with deep-fried shallots.
Chef’s Notes
You can season the prawn soup base with Thai fish sauce for added depth. Pork tails or thin slices of pork belly are also suitable. For non-pork options, replace all pork items with chicken.
